The Key Lime (Citrus aurantiifolia) might look small next to a grocery-store Persian lime, but don’t let its size fool you — this zesty little fruit has traveled the world and earned its legend.

Originating in Southeast Asia, the Key Lime sailed to the Caribbean on 16th-century Spanish trade ships and eventually made its home in the Florida Keys. It loved the heat, the salty air, and the rocky coral soil — and Florida loved it right back.

By the late 1800s, Key Limes were everywhere in the Keys. Locals used them in tonics, marinades, and — most famously — pies. But the Great Hurricane of 1926 wiped out most of the trees, forcing growers to switch to the sturdier Persian lime.

Still, the Key Lime never really went away. It became a symbol — of old Florida charm, island independence, and the unshakable sweetness that comes after a storm.

🏝️ The Key West Memory That Started It All

Before there were labels, blogs, or bundles, there was just us — Philip, Eric, and our son Jacob — crammed into a rental SUV full of beach towels and Goldfish crackers, chasing the sun all the way down the Overseas Highway.

It was 2022, and we’d decided to visit Key West for the first time.
We crossed those long, blue bridges with the windows down, salt air in our hair, and the radio playing Jimmy Buffett songs we didn’t even know we knew.

Our destination? The legendary Blue Heaven Café, home of Key West’s most famous Key Lime pie.

Jacob was 11, his cheeks still pink from snorkeling in Bahia Honda, when we sat down in that colorful, open-air café. Roosters strutted between tables. Laughter echoed. Someone strummed a guitar under a banyan tree.

Then the pie arrived — tangy, creamy, perfect.
Eric took one bite, leaned back, and said, “This tastes like happiness.”

That scent — lime, sea salt, and sunshine — never left us. It’s what inspired Key Lime Zest years later: a tribute to the moment we fell in love with Florida and decided we never wanted to leave.
